Zucchini Soup Recipe-4 cups sliced zucchini - 2 cups water - 2 chicken stock cubes -1/4 cup skim milk (or ordinary milk) -1/8 tsp. nutmeg -1/2 cup skim milk (or ordinary milk)-125 g. chopped onion |

to Prepare |
|
Place all ingredients, except milk, into saucepan, stir over high heat until boiling, reduce heat, simmer covered 10 minutes or until zuccinis are tender, cool slighly. Put half of mixture into blender, blend well. Return mixture to saucepan, add milk. 4. Stir over medium heat until soup boils. |
