Healthy Vegetable Soup Recipe
1 tbs butter 4-6 small carrots diced 2-3 large leeks sliced 1/2 cup green peas 3-4 sticks celery sliced 3-4 medium potatoes peeled and diced 1 1/2 - 2 l water 2 cubes vegetable stock (optional) salt and pepper to taste 3tbs finely chpped parsley

to Prepare |
|
1. Melt butter in pan on low heat. 2. Add vegetables (except potatoes and peas) stir to coat with butter. 3. Place lid on pan and cook for 10 minutes, occasionally stirring and turning vegetables. 4. Add boiling water, stock, potatoes and peas, add salt and pepper to taste. 5. Cover and simmer for 25. minutes or until vegetables are soft. 6. Serve hot, sprinkled with chopped parsley, and accompanied with garlic bread, french bread or turkish bread.
