 Ingredients

French Farmhouse Soup Recipe

  • 1 table spoon of butter

  • 4-6 samall carrots diced

  • 2-3 large leeks, sliced

  • 3-4 sticks celery sliced

  • 3-4 medium potatoes peeled and diced

  • 1 1/2 - 2 litres of water

  • Salt and pepper

  • 3 table spoons finely chopped parsley

 How to Prepare
  1. Melt butter in pan on low heat

  2. Add vegetables (except potatoes), stir to coat with butter.

  3. Place lid on pan and cook for 10 minutes, occasionally stirring and turning vegetables

  4. Add boiling water and potatoes, add salt and pepper

  5. Cover and simmer for 25 min. or until vegetables are soft

  6. Serve hot, sprinkle with chopped parsley, accompanied with crusty french bread
