 Ingredients

Curried Pea Soup Recipe

500g fresh peas

Hot Water

60g Butter

2 tabs. Flour

3 Chicken stock cubes

1.25 Ltr Water

1 to 2 Dessertspoons curry powder

1 cup milk

Salt and Pepper

 How to Prepare
  1.  Cover peas with hot water, bring to boil, boil until tender, then drain.

  2. Push through a fine sieve or puree in electric blender.

  3. Melt butter in saucepan, stir in flour, mix well

  4. Cook over low heat 2 minutes, remove from heat.

  5. Gradually add chicken stock (made with stock cubes and water)

  6. Return to heat, simmer 2 minutes, stirring constantly.

  7. Stir pureed peas, curry powder, and milk into sauce.

  8. Season with salt and pepper.

  9. Bring to boil, stiring, reduce heat, simmer 2 minutes.
