500 gr Snapper
1 tsp dried chili flakes 1 tbs ground paprika 2 mid size cloves of garlic (minced) 1 tbs cilantro leaves (minced) 2/3 tsp black (fresh ground) pepper 3 tbs lemon juice 1 tbs olive oil

So the best thing to do is to mix all these ingredients together before you leave. Add this quantity in 4 20x20 cm aluminium foil. This way if you only catch one fish of 500 grams you will not over power it with flavour. You can rather use the other aluminium foils with the marinade if you catch more fish. When you have caught the fish and done it up you add the fillets in the aluminium foil, seal very well and make sure the fish fillets are rubbed well with the spice. Add the foil to the grill (make sure the grill is not too hot - indirect heat is best when grilling fish). Grill on each side for about 6 minutes.
With Snapper I usually serve with: Mango Salsa/Chutney Lightly grilled Asparagus og lightly grilled Tomatoes.
