Bacon and Egg Muffin with Sun Dried Tomatoes Recipe
-
2 english muffins or fresh bread of your choice (eg. baguette, panini, ciabatta)
-
1/2 avocado
-
4 slices of cheese
-
2 slices crispy bacon
-
1-2 eggs of your choice (eg. pouched, fried, scrambled)
-
1 pineapple slice (cut in half)
-
4 sun dried tomatoes
-
BBQ sauce
-
salt & pepper to taste |

to Prepare |

Mash the avocado until smooth and add some salt and pepper to it, spread it over the 4 halves of english muffin.
-
Add pineapple and cheese on top of the avocado and leave in oven under the grill for 5-10 minutes or until golden.

Whilst the muffins are in the oven fry the bacon in a frying pan until crispy.

Cook the eggs of your liking.
-
Take the muffins out of the oven and add the bacon on top.

Add the eggs on top of the bacon and sun dried tomatoes on top of the eggs.
-
Sprinkle with BBQ sauce and salt & pepper. |
