 Ingredients

Party Chicken and Rice Recipe

-2 X 2kg  chicken boilers
-1 bay leaf
-1 small carrot
-slice of lemon
-1 finely chopped onion
-2 sticks celery
-1 teas. salt
-few peppercorns
-4 cups washed rice
-1 cup cream
-6 tabs. plain flour
-1 onion
-90g (3oz) butter
-1 red capsicum, diced
-1 clove garlic, crused
-250g. (8oz) toasted almonds

 How to Prepare

  1. Put chicken into a large saucepan with peeled and halved onion, sliced celery, carrot, salt, bay leaf, peppercorns, lemon and water to cover.

  2. simmer until temder, approx 2 hrs.

  3. remove chicken, strain stock and chill.

  4. remove fat from stockand put 1.5 litres (2. 1/2 pts) of stockinto large saucepan and bring to boil.

  5. add rice and boil for 15 mins. Drain and save stock.

  6. Measure out 4 cups stock.

  7. cut chicken into bite size pieces. Remove bones.

  8. Saute onions, capsicum, garlic in butter for 5 mins, add flour, stir for a few mins, add chicken stock and cook for 5 mins.

  9. Add cream and season to taste. Combine sauce, rice and chicken. Spoon into ovan-proof dish, garnish with almonds, and allow to heat in a moderate ovan for approx 20 mins
