Chicken Curry Stir-Fry Delight Recipe
-
400 gr chicken (diced)
-
1 onion (finely chopped)
-
1 garlic clove (minced)
-
1 can pineapple (cut in nice pieces)
-
1 capsicum (cut in nice pieces)
-
1 ts soy sauce
-
200 gr sliced mushrooms
-
1 can coconut milk
-
1 1/2 - 2 ts curry powder
Serve with rice (optional) |

to Prepare |

Fry the chicken in oil - when cooked take the chicken out of the frying pan.

Add garlic to the frying pan and all the other vegetables exept the pineapple and cook for 2 minutes.

Add the chicken and pineapple and pineapple juice.

Stir the coconut milk, curry powder and soy sauce together and pour over the chicken and vegetables, let cook for 3-4 min.

Serve with rice |
