 FORUM: cooking healthier hot chips
 I have found that you dont need to deep fry hot chips It is just as nice laying them in the oven on some baking paper Apart from eachother, a bit of oil can help to make them extra Crispy. This sure beats having them cooked in Trans fats.....

 Ingredients

Chicken Curry Stir-Fry Delight Recipe

  • 400 gr chicken (diced)

  • 1 onion (finely chopped)

  • 1 garlic clove (minced)

  • 1 can pineapple (cut in nice pieces)

  • 1 capsicum (cut in nice pieces)

  • 1 ts soy sauce

  • 200 gr sliced mushrooms 

  • 1 can coconut milk

  • 1 1/2 - 2 ts curry powder

Serve with rice (optional)

 How to Prepare
  1. Fry the chicken in oil - when cooked take the chicken out of the frying pan.

  2. Add garlic to the frying pan and all the other vegetables exept the pineapple and cook for 2 minutes.

  3. Add the chicken and pineapple and pineapple juice.

  4. Stir the coconut milk, curry powder and soy sauce together and pour over the chicken and vegetables, let cook for 3-4 min.

  5. Serve with rice
