Coconut Tartlets Recipe
2 eggs 1 cup sugar 2 table spoons butter 8 table spoons coconut 1-2 tee spoons almond essence good shortcrust pastry raspberry jam

to Prepare |
|
1. Beat eggs and sugar well together.
2. Add butter, coconut & essence & mix well.
3. Roll out pastry thinly & line tartlet tins.
4. Place a little raspberry jam in each, then top with tee spoon of coconut mixture.
5. Bake in oven at 200c for 10-15 mins
6. Garnish with fresh fruit
