Blackberry Coconut Cookies Recipe
1 1/2 cups S.R Flour 90g butter 2 table spoons sugar 1 egg yolk 2 table spoons water (approx)
TOPPING 1 egg white 1 cup coconut 60g ground almonds or almond essence 1/2 cup. sugar 2 table spoons milk blackberry jam

to Prepare |
|
1. Sift flour into basin, rub in butter 2. Add sugar, egg yolk and enough water to give soft dough. 3. Knead until smooth. 4. Roll to 50mm thickness cut into 5cm rounds with cutter. 5. Place on lightly greased oven trays. 6 Place level tee spoons of coconut mixture onto each round of dough. 7. Make small indentations in top, put in small amount of jam. 8. Bake in moderate oven 12 to 15 minutes or until lighly browned.
TOPPING: Beat egg white until soft peaks form, fold in dry ingredients and milk
