Tzatziki Recipe 500 gr (2 cups) Greek style natural yoghurt 3 garlic cloves (minced) 1 cucumber peeled 1 tbs fresh mint leaves (minced) 1 1/2 tbs lemon juice Salt and pepper to taste |

to Prepare |
|
Place yoghurt in a sieve lined with muslin over a bowl and stand for 10-15 minutes to allow the excess whey to drain away. Discard the whey. Cut the cucumber in small pieces and add to the yoghurt. Add all the other ingedients and taste with salt and pepper. Leave in fridge for 20 minutes or up to 24 hrs to let the flavours develop. |
