 Ingredients

Tender Orange Pork Stir-Fry Recipe

0.5 - 0.6 kg pork tenderloin cut into strips
1 tbs Olive oil
Salt & Pepper

Vegetables
1 medium carrot
1/2 zuccini
1/2 capsicum
150 gr snow peas
1 large red onion
1 spring onion

Marinade/Sauce
1 1/2 Medium sized garlic cloves (minced)
1 ts Fresh ginger (minced)
1 ts Brown Sugar
1/2 Cup Freshly squeezed orange juice
1 ts Sherry
2 tbs Soy sauce
2 tbs Sesame oil
1 tbs cornstarch

Serve with rice to your liking.

 How to Prepare


If you have the time the pork will be more tender and tasty if you marined it for 2 hours or more. However you are in lack of time you can marinade the pork for about 20 minutes.

Combine the garlic, ginger, brown sugar, orange juice, sherry, soy sauce and sesame oil in a bowl add the pork strips and leave in fridge to marinade.

Heat 1 tbs olive oil in a large skillet or wok over medium high heat after 30 seconds or so add the pork, however do not add the marinade, leave for later. Add a pinch of salt and pepper. When the pork is cooked and lightly browned take the pork out of the skillet/wok and add all the vegetables. Stir fry 3-4 minutes until the vegetables are tender crisp.

Add the pork to the skillet/wok with the vegetables, combine the cornstarch with the rest of the marinade and pour over the stir fry and mix with the pork and vegetables, cook for a couple of minutes.

Serve with rice.
