1.5 Lb eggplant(cubs)

1 Lb tomato (cubs)
-
1Tbsp garlic
-
3 Tbls parsley
-
1/2 cup olive oil
-
1 tsp cumin
-
1 Tbsp paprika
-
1 tsp salt
-
1 tsp black peper
-
1/2 tsp ginger
-
1/3 cup lemon jus
-
vegetable oil for deep frying |

to Prepare |
|
remouve just half of the eggplant skin and cut it into small cubs, Deep fry into preheated oil of 360 degrees,cook until golden brown ,remove using a slotted spoon and drain on paper towels.
in a large fry pan put half of the olive oil and garlic, add the fried eggplant tomatos (cut into cubs) and all the seasoning( salt cumin...) let cook for 15 min , stir frequently, add lemen jus and the rest of olive oil, cook for 10min.
can be served hot or cold, in sandwich or plat and can be stored in the fridge for on week. |
